For a low-cost, low-carb, low-fat, low-calorie desert the whole family will love, use: 

One package (4 serving size) lemon gelatin 
1 1/2 cups boiling water 
1 1/2 cups plain yogurt 
1/8 teaspoon Stevia 
2 tablespoons lemon extract 

Dissolve gelatin in boiling water. Add the other ingredients and blend well. Refrigerate 15-20 minutes. Once the mixture is chilled, but not set, blend well once more and pour over shaved ice. Gelatin is an emulsifying agent like eggs, cornstarch, or corn syrup - keeping large crystals from forming during the freezing process. To make icy fruit treats, mix one of these agents with chopped or mashed fruit, and shaved ice and keep in the freezer for no more than 3 hours.
